GREEN DAIQUIRI GELEE
Serves 4 to 6
FOR 4-CUP MOLD
1 1/3 cups water
1 cup sugar
Zest of 6 limes
Juice of 6 limes (about 1 cup)
Rum
3 envelopes unflavored gelatin
3/4 cup cold water
Put water and sugar in a wide, thick-bottomed saucepan and bring to a boil for five minutes. Remove from heat and add the lime zest. Steep for 15 minutes, then strain into a measuring cup. (Produces about 1 1/4 cups of syrup.) Add the lime juice. Then add up to 2 cups rum so that the total liquid equals 4 cups. Empty the envelopes of unflavored gelatin into a small saucepan with 3/4 cup cold water, leave for 5 minutes to absorb liquid, then heat on low and stir until completely dissolved, about 1 minute. Stir in some of the lime-rum mixture, making sure that the gelatin is completely dissolved, then return gelee mix to daiquiri mixture and stir.
Pour into mold. When cool, refrigerate for 6 hours or until set.
