The great white wines of the northern Rhone--Hermitage, Crozes-Hermitage and Saint-Joseph blanc--are a blend of Marsanne and Roussanne, a white grape prized for its haunting fragrance. The Los Olivos winery Zaca Mesa produces a pale gold Roussanne from grapes grown in its own Zaca Vineyards. Delicately scented, it has an herbal, floral character and a slightly bitter finish. Drink it as an aperitif or pair it with vibrant Mediterranean dishes.
