Apple Pancakes, Steak Diane

DEAR SOS: The apple pancake at the Bistro Garden in Beverly Hills is out of this world. Please obtain this recipe for me.

DEAR ANDY: From the Bistro Garden to you. The recipe makes seven man-size pancakes, enough for a crowd. Enjoy.
BISTRO GARDEN GERMAN APPLE PANCAKE
3 whole eggs
3 eggs, separated
1/2 cup plus 2 tablespoons sugar
1 tablespoon vanilla
2 1/4 cups milk
4 cups flour
7 Granny Smith or Pippin apples, peeled and cored
7 tablespoons butter
Cinnamon Sugar
Sour cream, jam or marmalade, optional
Mix whole eggs, egg yolks, sugar, vanilla and milk. Stir in flour and mix well. Let stand 15 minutes. Whip egg whites until stiff and fold into batter.
Cut 1 apple into 1/2-inch slices and saute in 1 tablespoon butter in 10-inch stainless-steel pan until both sides are lightly browned. Add 1 cup batter, cover and cook until golden brown underneath. Flip over and heat quickly until set. Sprinkle top with Cinnamon Sugar. Place under broiler to brown.
Slide pancake onto serving plate. Sprinkle with additional Cinnamon Sugar, if desired. Repeat process with remaining apples, butter and batter, cooking each pancake separately. Serve with sour cream and/or jam or marmalade. Makes 7 pancakes.

Cinnamon Sugar
1 cup sugar
1 tablespoon ground cinnamon
Mix sugar with cinnamon.

STEAK DIANE
6 tenderloin steaks
1/2 cup butter
1/4 cup brandy
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1 clove garlic, minced
1 tablespoon chopped parsley
Cook steaks quickly in butter in skillet. Pour brandy over steaks. Carefully, with long wooden match, ignite brandy and let flame until it burns out. Add salt, pepper, garlic and parsley. Heat through. Serve steaks with pan liquid spooned over. Makes 6 servings.

DEAR JANET: A reader shared her version with us some time ago. Hope it satisfies.
NOT UNLIKE ORANGE JULIUS
1/2 (6-ounce) can frozen orange juice concentrate
1/2 cup milk
1/2 cup water
1/4 cup sugar
1/2 teaspoon vanilla
5 or 6 ice cubes
Combine orange juice concentrate, milk, water, sugar, vanilla and ice cubes in blender container. Cover and blend until smooth, about 30 seconds. Serve immediately. Makes about 3 cups.
