Barbecuing is not the only way to cook a rib. And spareribs and baby backs are not the only cuts to consider.
A veal breast, for instance, is full of bones. Think of the meat as lean beef spareribs. You can cut the breast into riblets to be pan-fried or broiled, or you can stuff the whole slab with bread crumbs, cloves, garlic and currants, then roast the meat.
What you end up with is a plateful of some of the most tender ribs imaginable.
